USDA Prime is a quality rating assigned by the U.S. Department of Agriculture based on a number of criteria including marbling, texture and color. While beef may receive prime grading based on these criteria, which does make it of a higher quality, it does not guarantee optimum flavor. Only 2-3% of all cattle raised in the U.S. achieve the prime rating, which makes for limited availability. This limited availability then causes most retailers to buy any USDA Prime that they can. The problem with this is that consumers are generally not offered consistency when buying prime beef. USDA Prime Natural Angus Beef - Porterhouse The J. B. Hendry porterhouse is a fabulous combination of flavors and textures. It offers both a tender filet and a hearty, well marbled strip steak. Both steaks are provided with enhanced flavor due to the T shaped bone that divides them.
